Entrée – Poultry
Pesto Chicken Spirals |

Yield: eight portions
Ingredients:
Step 1 - Chicken

chicken breasts, boneless and skinless, about 8 oz. each |
 Step 2 - Crumb Mixture
|
|
2 c. |
fresh parsley, chopped |
|
4 Tbsp. |
Grey Poupon mustard |
|
2 Tbsp. |
Parmesan cheese, grated |
|
1 tsp. |
garlic, chopped fine |
|
2 tsp. |
basil leaves, dried |
|
1 each |
egg, large |
|
1/2 c. |
bread crumbs, plain |
 Step 3 - Broiling
|
|
2 Tbsp. |
butter or margarine |
 Step 3 - Skewers
|

egg, large |

2 Tbsp. |

bread crumbs, plain |

Step 1 - Chicken procedure: Pound the chicken breasts until they are 1/4-inch thick.
Step 2 - Crumb Mixture procedure: Blend the parsley, mustard, Parmesan cheese, garlic, basil, egg and breadcrumbs.
Spread the crumb mixture evenly over the chicken. Roll up each breast from the short end.
Step 3 - Broiling procedure: Broil 6 inches from the heat under the broiler for about 10 to 15 minutes, turning after 8 minutes and brushing with the butter.
Serve with rice.
Step 3 - Skewers procedure: Combine the egg and mustard. Dip the chicken into the egg mixture and then into the breadcrumbs. Cut each roll crosswise into 4 pieces. Thread the chicken pieces onto 8 skewers.
