This recipe was inspired by Emily Hunsucker, of Cincinnati, OH (USA) and was featured on "You're the Chef" episode #603.
Yield: one cheescake
1 1/2 c.
graham cracker crumbs
butter or margarine, melted
1 1/4 lb.
cream cheese, softened
lemon peel, freshly grated
strawberries, mashed well
Crust procedure: Preheat oven to 350°F.
Stir together graham cracker crumbs and sugar. Mix in butter thoroughly and press into a 9-inch spring-form pan. Bake the crust for 10 minutes. Cool.
Reduce oven temperature to 300°F.
Filling procedure: Beat cream cheese in a large mixing bowl. Gradually add the sugar, beating until fluffy. Add lemon peel and vanilla. Beat in eggs one at a time.
Pour slowly into the graham shell. Bake for 1 hour or until the center is firm. Cool to room temperature and then chill for 3 hours.
Glaze procedure: Blend sugar and cornstarch together in a small saucepan. Stir in water and mashed strawberries. Cook, stirring constantly, until the mixture thickens and boils. Boil and stir for approximately 2 minutes. Cool thoroughly before spreading over cheesecake.
