Quinoa Salad with Herbed Papaya |

Yield: six portions
Ingredients:

water |
|
12 oz. |
quinoa |
|
1/4 c. |
parsley, chopped fine |
|
2 Tbsp. |
oregano, cleaned and chopped |
|
1 tsp. |
garlic, minced |
|
1/4 c. |
olive oil |
|
1 Tbsp. |
sherry wine vinegar |
|
to taste |
salt |
|
to taste |
ground white pepper |
|
2 Tbsp. |
olive oil |
|
1 Tbsp. |
garlic, minced |
|
2 each |
papaya, ripe |
|
1 Tbsp. |
rosemary, stripped and chopped |
|
to taste |
sugar, granulated |
|
to taste |
salt |
|
to taste |
ground white pepper |

Procedure: Boil water and add quinoa. Cook over low heat for six minutes; cover and let rest for five minutes.
Pour off any excess water, cool on a sheet tray.
Add herbs, oil and seasoning to the quinoa when it is cold, combining thoroughly.
Sauté garlic until it is golden brown. Add the papaya and rosemary and remove from heat.
Season and cool, combine with quinoa.
