Yield: two 6-oz. filets


  • 12 oz. boneless, skinless salmon filets
  • 1 1/2 Tbsp. salt
  • 1/4 c. light brown sugar
  • 1 tsp. ground coriander
  • 1/2 tsp. 5-spice powder (available in the Chinese specialty aisle of your favorite supermarket)
  • 1 tsp. ground black pepper


  1. Wash and dry the salmon. Combine the spices. Coat the salmon completely with the spice mixture.
  2. Cook on a pre-heated grill over high heat for 2 minutes on each side. The salmon should be lightly charred on the outside and not completely cooked in the center for the best flavor. If you need to have your salmon cooked well done, then please do so. (I would suggest you try the salmon cooked medium -- once you do you will never eat it well done again!)
