Emily’s Famous Strawberry Cheesecake

Yield: one cheescake


  • 1 1/2 c. graham cracker crumbs
  • 2 Tbsp. granulated sugar
  • 2/3 c. butter or margarine, melted
  • 1 1/4 lb. cream cheese, softened
  • 1 c. granulated sugar
  • 2 tsp. lemon peel, freshly grated
  • 1/4 tsp. vanilla
  • 3 each eggs
  • 1 c. strawberries, mashed well
  • 1 c. granulated sugar
  • 3 Tbsp. cornstarch
  • 1/3 c. water


Crust procedure:
  1. Preheat oven to 350°F.
  2. Stir together graham cracker crumbs and sugar. Mix in butter thoroughly and press into a 9-inch spring-form pan. Bake the crust for 10 minutes. Cool.
  3. Reduce oven temperature to 300°F.
Filling procedure:
  1. Beat cream cheese in a large mixing bowl. Gradually add the sugar, beating until fluffy. Add lemon peel and vanilla. Beat in eggs one at a time.
  2. Pour slowly into the graham shell. Bake for 1 hour or until the center is firm. Cool to room temperature and then chill for 3 hours.
Glaze procedure:
  1. Blend sugar and cornstarch together in a small saucepan. Stir in water and mashed strawberries. Cook, stirring constantly, until the mixture thickens and boils. Boil and stir for approximately 2 minutes. Cool thoroughly before spreading over cheesecake.
